VeggiMornin’ Roll Ups

  • 1 package Franklin Farms VeggiMornin’ Links (prepared)

  • Crepe

    • 1 Cup 4% cottage cheese

    • 6 Large whole eggs

    • ½ Cup all-purpose unbleached flour

    • Pinch of salt

    • ¼ Cup Avocado oil

    • ¼ Cup milk

    • ½ Teaspoon of vanilla

    • 2 Tablespoon of raw sugar

  • Fresh Strawberry Sauce

    • 2 Cups fresh strawberries, tops removed and diced

    • 2-4 Tablespoons pure maple syrup

    • 1-2 Tablespoon unsalted butter

    • Pinch of salt

      Prepare links, set aside and keep warm.


      Crepes: Combine all crepe ingredients in a blender and process until smooth and silky. Heat a small 8-10” nonstick skillet on medium heat. Lightly spray the skillet with a natural nonstick cooking spray. Add ¼ cup batter to the middle of the skillet and let it naturally spread out or gently lifting and circling the pan to help create a nice even crepe. Cook for 1 minutes or until golden. Side a flat rubber spatula to loosen the edges, flip and continue to cook for an additional 30 seconds. Slide crepe on plate and repeat with the rest of the batter.

      Strawberry sauce: Combine all ingredients in a blender except for the butter, process until smooth. Pour mixture into a skillet and bring to a simmer, stirring occasionally. Turn heat off and whisk in the butter. Place 1 veggie link into a crepe and roll up. Sprinkle with powder sugar and serve with warm strawberry sauce or additional maple syrup.
