Chickpea Tofu ‘Egg Salad’
- 1 Package of Franklin Farms Chickpea Tofu, cut into small cubes 
- ½ Cup of Plant-Based Mayo 
- 2 Tablespoons of Yellow Mustard 
- ¼ of a Red Onion, diced 
- 2 Celery Stalks, diced 
- 1 Teaspoon of Garlic Powder 
- 1 Teaspoon Dried Dill 
- Salt & Pepper to Taste 
- Optional:Dash of turmeric for color 
 Sprinkle of Everything But the Bagel Seasoning 
 - Combine all ingredients in a bowl and mix to combine. Gently mash the chickpea tofu while keeping the larger chunks for texture. Enjoy as a sandwich, lettuce wrap or with crackers for a quick snack!
