Chickpea Tofu ‘Egg Salad’

  • 1 Package of Franklin Farms Chickpea Tofu, cut into small cubes

  • ½ Cup of Plant-Based Mayo

  • 2 Tablespoons of Yellow Mustard

  • ¼ of a Red Onion, diced

  • 2 Celery Stalks, diced⁠

  • 1 Teaspoon of Garlic Powder

  • 1 Teaspoon Dried Dill

  • Salt & Pepper to Taste⁠

  • Optional:⁠Dash of turmeric for color⁠
    Sprinkle of Everything But the Bagel Seasoning ⁠

    Combine all ingredients in a bowl and mix to combine. Gently mash the chickpea tofu while keeping the larger chunks for texture. Enjoy as a sandwich, lettuce wrap or with crackers for a quick snack! ⁠
