Spring Edamame Pasta

  • 1 cup Franklin Farms Shelled Edamame – Prepared

  • 2 cups of wilted Spinach

  • 1\2 of an Avocado

  • 1\4 cup of Olive Oil

  • 2 Cups of Pasta

  • 1\3 cup of reserved water from pasta

  • 1 Tablespoon of Lemon Juice

  • 2 Garlic Cloves, minced

  • 1 Teaspoon of Onion Powder

  • 1 Teaspoon of Crushed Red Pepper

  • 1 Teaspoon of Salt & Pepper

    Start by wilting the spinach (this will help it blend better for the sauce). While the spinach is wilting, prepare your pasta. In a food processor, combine the wilted spinach, edamame, avocado, olive oil and lemon juice and pulse until combined. When the pasta is close to being finished, add in your ‘pasta water’ and blend. Add in the garlic, onion powder, red pepper, and salt & pepper and blend.

    When the pasta is finished, drain, and return to the pot. Add the sauce and heat the pasta and sauce together on low for a few minutes. Serve & enjoy!
