Mediterranean Fusion Tofu Salad

  • 1 Package of Franklin Farms Mediterranean Fusion Tofu, cut into triangles

  • 1 Box of Tri-Color Quinoa

  • 1 Cup of Greens of Choice

  • 1/2 Cucumber, Cut into chunks

  • 1/2 Cup of Cherry Tomatoes, Cut in half

  • 1/2 Cup of Kalamata Olives, Cut in half

  • Greek Dressing of Choice

  • Dill for Garnish

Cook quinoa according to package directions and set aside. Pan-fry Fusion Tofu in a little oil until golden on each side. Assemble salad with a bed of quinoa followed by veggies. Top with Fusion Tofu and drizzle of Greek dressing.
