Franklin Farms Green Bean Casserole

Serves 6

  • 1 14.5 oz Can of French Style Green Beans, drained

  • 1\2 Package of Franklin Farms Soft Tofu

  • 1\2 of a Yellow Onion, sliced

  • 1 Cup of Baby Bella Mushrooms, sliced

  • 1\2 Cup Vegetable Stock

  • 1 Teaspoon of Soy Sauce

  • 1 Tablespoon of Olive Oil

  • 1 Tablespoon of Flour

  • Pinch of Crushed Red Pepper

  • 2 Teaspoons of Garlic Powder

  • Crispy Fried Onions

  • Salt & Pepper

    Pre-heat oven to 350 degrees F. In a large saucepan over medium heat, heat olive oil and add onions. Sauté until lightly softened and add in the mushrooms and sauté for a few minutes. In a food processor, combine the tofu with the stock and puree together. Add 1 tablespoon of flour to the onions and mushrooms and combine (this will help thicken the sauce). Add the tofu mixture and stir to combine. Reduce heat and add the soy sauce, garlic powder, crushed red pepper and salt and pepper to taste. Add the drained can of green beans and stir together. Transfer to a baking dish and top with crispy fried onions. Bake for 20-25 minutes and enjoy!
