Falafel Balls with Couscous & Tzatziki
Serves 3
- 1 Package of Franklin Farms Falafel Balls 
- 6 oz box of Couscous 
- Juice of 1\2 of a Lemon 
- Tzatziki Sauce: - 1 Cup of Dairy Free Yogurt 
- 1 Cucumber, grated into fine shreds 
- 1 Garlic Clove, pressed 
- Juice of a 1\2 of Lemon 
- Salt and Pepper to taste 
 
- Optional: Fresh slices of cucumber and red onion 
Prepare couscous according to package directions. While couscous is cooking, add the juice of a 1\2 a lemon (save the other half of lemon for the tzatziki) and stir. Prepare Falafel Balls according to package directions. Prepare Tzatziki Sauce by combining all ingredients in 1 bowl. Stir and set aside. Serve Falafel Balls with couscous, drizzle of Tzatziki sauce and freshly sliced cucumber and red onion.
