Falafel Balls with Couscous & Tzatziki

Serves 3

  • 1 Package of Franklin Farms Falafel Balls

  • 6 oz box of Couscous

  • Juice of 1\2 of a Lemon

  • Tzatziki Sauce:

    • 1 Cup of Dairy Free Yogurt

    • 1 Cucumber, grated into fine shreds

    • 1 Garlic Clove, pressed

    • Juice of a 1\2 of Lemon

    • Salt and Pepper to taste

  • Optional: Fresh slices of cucumber and red onion

Prepare couscous according to package directions. While couscous is cooking, add the juice of a 1\2 a lemon (save the other half of lemon for the tzatziki) and stir. Prepare Falafel Balls according to package directions. Prepare Tzatziki Sauce by combining all ingredients in 1 bowl. Stir and set aside. Serve Falafel Balls with couscous, drizzle of Tzatziki sauce and freshly sliced cucumber and red onion.
