Edamame Salsa
- 1 Package of Franklin Farms Shelled Edamame, cooked according to package directions. 
- 1 Cup of Black Beans, rinsed 
- 1\2 Cup Corn (we used fire roasted. You can find it in the freezer aisle. Make sure to thaw it first) 
- Small wedge of red onion, diced (add more onion if prefer more) 
- 1 Small jalapeno, seeds removed and diced 
- 1\2 of a Large Tomato, diced 
- Juice of 1 Lime 
- 1\3 cup Olive Oil 
- 1 Clove of garlic, minced 
- 1\2 teaspoon of Cumin 
- 6-8 sprigs of cilantro, chopped 
- Salt and Pepper to taste 
Add all ingredients to a large bowl and combine. Let salsa sit in the refrigerator for 30 minutes to an hour before serving.
