Edamame Salsa

  • 1 Package of Franklin Farms Shelled Edamame, cooked according to package directions.

  • 1 Cup of Black Beans, rinsed

  • 1\2 Cup Corn (we used fire roasted. You can find it in the freezer aisle. Make sure to thaw it first)

  • Small wedge of red onion, diced (add more onion if prefer more)

  • 1 Small jalapeno, seeds removed and diced

  • 1\2 of a Large Tomato, diced

  • Juice of 1 Lime

  • 1\3 cup Olive Oil

  • 1 Clove of garlic, minced

  • 1\2 teaspoon of Cumin

  • 6-8 sprigs of cilantro, chopped

  • Salt and Pepper to taste

Add all ingredients to a large bowl and combine. Let salsa sit in the refrigerator for 30 minutes to an hour before serving.
