Crispy Tuna Rice Bites

  • 1 Cup of Sushi Rice, prepared according to package directions.

  • 1 Teaspoon of Sesame Oil

  • 2 Tablespoons of Rice Vinegar

  • 1 Tablespoon of Sugar

    Spicy Tuna

  • 1 Package of Franklin Farms Original Plant-Based Tuna

  • 3 Tablespoons of Plant-Based Mayo

  • 2 Tablespoons of Siracha

  • 1 Tablespoons of Soy Sauce

    Topping

  • Fresh Jalapeño Slices

  • Sesame Seeds

Prepare rice according to package directions. Once finished, fluff rice with a fork and add sesame oil, rice vinegar and sugar and mix well. Line a 8x8 pan with plastic wrap and add the rice. Using a wooden spoon, form the rice into about ½ inch thick block. Cover and refrigerate for at least 2 hours. This will allow the rice to form and become easier to slice.

After 2 hours, remove the rice and cut into rectangles (easier to pick-up). In a large shallow pan over medium heat, add about ½ cup of vegetable oil to your pan. Once the oil is warm, add the rice bites and cook until golden brown on each side. Remove from pan and let sit on a paper towel.

Combine the plant-based tuna, mayo, sriracha and soy sauce in a bowl. Using a small spoon top each rice bite with about a tablespoon of the spicy tuna mixture. Top with sliced jalapeno, avocado and sesame seeds. Enjoy!
