Creamy Spinach Dip

  • ½ Package of Franklin Farms Chickpea Tofu

  • 3 Cups of Fresh Spinach

  • ¾ Cup of Mozzarella Cheese (regular or plant-based)

  • ¼ Cup of Sour Cream (regular or plant-based)

  • 2 Cloves of Garlic, minced

  • 1 Teaspoon of Onion Powder

  • 1 Teaspoon of Crushed Red Pepper

  • 1 Teaspoon of Salt and Pepper

  • 1 Tablespoon of Olive Oil

    Pre-heat oven to 375 degrees. Heat a large pan over medium heat and add the oil. Once the oil is hot, add the garlic and spinach. Let the spinach slowly wilt for a few minutes. In a food processer, blend the sour cream with the Chickpea Tofu. Once wilted, add the Chickpea Tofu mixture and combine it with the spinach. Add the seasonings and half of the mozzarella cheese. Stir until the cheese is melted and all ingredients are combined well. Transfer the dip to an oven safe dish and top with the remaining mozzarella cheese. Bake for 20 minutes or until golden brown. Serve with toasted bread, veggies and crackers.
