Cinnamon Sugar Chickpea Tofu with Sautéed Apples

  • 1 Package of Franklin Farms Chickpea Tofu

  • 2 Apples, diced

  • 2 Tablespoons of Maple Syrup

  • 6 Tablespoons of Cinnamon Sugar Mix

  • 1 Tablespoon of olive oil

  • 1 Tablespoon of Coconut Oil, melted

  • 1-2 Tablespoons of Caramel Sauce

Heat a skillet over medium heat and add olive oil. Once the oil is warm, add in the diced apples. Cook the apples on low heat for a few minutes until slightly softened. Add in the maple syrup and reduce heat and continue to cook until the apples are tender. Prepare Chickpea Tofu by removing from package and patting the block of chickpea tofu with a paper towel to absorb excess water. Cube chickpea Tofu into chunks and add to an air-fryer basket. Air-fry at 400 degrees for about 20 minutes, turning halfway through.

Once the Chickpea Tofu is finished, add to a bowl with the melted coconut oil. Toss cubes until evenly coated and then add the cinnamon sugar. Toss until each cube is covered with cinnamon sugar.

Add the Cinnamon Sugar Chickpea Tofu to a plate and top with the sautéed apples and drizzle with caramel sauce. If you're feeling extra sweet, serve with your favorite ice cream or whipped topping.
