Chickpea Tofu Hash

Serves 4

  • 1 Package of Franklin Farms Chickpea Tofu

  • 3 Franklin Farms Breakfast Links, cut into small chunks

  • 1\2 of a Small Zucchini, diced into small chunks

  • 1\3 of a Red Onion, diced into small chunks Green Onion for Garnish

  • 2 Tablespoons of Olive Oil

  • 1 Teaspoon of Garlic Powder

  • 1 Teaspoon of Onion Powder

  • 1 Teaspoon of Smoked Paprika

  • Salt & Pepper

    In a large skillet over medium heat, heat 1 tablespoon of olive oil and add onions and zucchini and sauté until soft. Remove from skillet and set aside. Cube Chickpea Tofu into small bite sized pieces. Using the same skillet, sauté the Chickpea Tofu in 1 tablespoon of olive oil over medium heat. Sauté until the Chickpea Tofu is golden brown. Add the cooked veggies, breakfast links, seasoning and sauté for 5-7 minutes. Serve with a garnish of fresh green onions and a side of your favorite toasted bread.
